Spicy lentils topped with crunchy carrots, purple cabbage, avocado slices, cucumber sticks and toasted sesame seeds nestled in tender butter lettuce. Served with homemade peanut sriracha sauce on the side.

I made mango, black cherry, and pineapple-flavored Knox Blox for this family whose mother loved JELL-O.

CURRIED CHICKEN SALAD

Freshly roasted chicken, lightly curried and combined with dried cranberries and crunchy cashews. Served on a flaky mini croissant.

SMOKED SALMON TOAST

Thinly sliced smoked salmon with cream cheese and capers served on homemade toasted bread.

Lighter Finger Food

I put this menu together to honor a dear family friend whose trademark dishes included chicken salad sandwiches and JELL-O. Her daughters chose other of their mom's favorites from a larger list of choices I provided. For the post-funeral reception, I created flower arrangements and a tablescape based on her favorite color (blue).
